Tajine Zitoun is a classic Algerian dish renowned for its delightful blend of chicken, olives, and citrus. Ingredients
- Chicken thighs – 1 kg / 2.2 lbs
- Olive oil – 2 tbsp / 30 ml
- Onion, finely chopped – 1 medium / 150 g
- Garlic cloves, minced – 3 / 15 g
- Carrots, sliced – 2 medium / 200 g
- Green olives, pitted – 200 g / 7 oz
- Lemon, juiced and zested – 1 medium / 50 ml juice
- Chicken stock – 500 ml / 2 cups
- Bay leaves – 2
- Ground black pepper – 1 tsp / 5 g
- Salt – to taste
Instructions
- Heat olive oil in a heavy pot or Dutch oven over medium-high heat.
- Brown the chicken thighs on both sides, then remove and set aside.
- In the same pot, add chopped onion and sauté until translucent.
- Add minced garlic, sliced carrots, and bay leaves; cook for another 5 minutes.
- Return the chicken to the pot, add olives, lemon zest, and juice.
- Pour in chicken stock, season with salt and pepper, and bring to a simmer.
- Reduce the heat to low and cover, cooking for 30-40 minutes until the chicken is tender.
- Adjust seasoning and serve hot with crusty bread or steamed vegetables.
