Tajine zitoune – Classic

Tajine Zitoun is a classic Algerian dish renowned for its delightful blend of chicken, olives, and citrus. Steeped in tradition, this dish hails from the Maghreb region and is a quintessential representation of North African cuisine. Ingredients

  • Chicken thighs – 1 kg / 2.2 lbs
  • Olive oil – 2 tbsp / 30 ml
  • Onion, finely chopped – 1 medium / 150 g
  • Garlic cloves, minced – 3 / 15 g
  • Carrots, sliced – 2 medium / 200 g
  • Green olives, pitted – 200 g / 7 oz
  • Lemon, juiced and zested – 1 medium / 50 ml juice
  • Chicken stock – 500 ml / 2 cups
  • Bay leaves – 2
  • Ground black pepper – 1 tsp / 5 g
  • Salt – to taste

Instructions

  1. Heat olive oil in a heavy pot or Dutch oven over medium-high heat.
  2. Brown the chicken thighs on both sides, then remove and set aside.
  3. In the same pot, add chopped onion and sauté until translucent.
  4. Add minced garlic, sliced carrots, and bay leaves; cook for another 5 minutes.
  5. Return the chicken to the pot, add olives, lemon zest, and juice.
  6. Pour in chicken stock, season with salt and pepper, and bring to a simmer.
  7. Reduce the heat to low and cover, cooking for 30-40 minutes until the chicken is tender.
  8. Adjust seasoning and serve hot with crusty bread or steamed vegetables.
