Ingredients

  • All-purpose flour – 3 cups / 360 g

  • Active dry yeast – 2 teaspoons / 7 g
  • Sugar – 1 tablespoon / 12 g
  • Salt – 2 teaspoons / 10 g
  • Olive oil – 1/4 cup / 60 ml
  • Sesame seeds – 2 tablespoons / 18 g

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until foamy.
  2. In a large mixing bowl, mix the all-purpose flour, semolina flour, and salt.
  3. Add the yeast mixture and olive oil to the dry ingredients and mix until a rough dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until it doubles in size.
  6. Preheat your oven to 375°F (190°C).
  7. Punch down the dough and shape it into a round loaf. Place it on a parchment-lined baking sheet.
  8. Brush the top of the dough with a little water and sprinkle with sesame seeds.
  9. Let the loaf rest for another 15 minutes, then bake in the preheated oven for 30-35 minutes, or until golden brown and hollow sounding when tapped.
  10. Allow the bread to cool on a wire rack before slicing.
