Ingredients

  • pork knuckle (fresh) – 1 kg / 2.2 lbs
  • potatoes – 500 g / 1 lb
  • turnips – 300 g / 10.5 oz
  • carrots – 200 g / 7 oz
  • rutabaga – 300 g / 10.5 oz
  • onion – 1 large
  • whole black peppercorns – 1 tsp
  • bay leaves – 2
  • cloves – 6
  • salt – to taste
  • mustard – for serving

Instructions

  1. Place the pork knuckle, onion, peppercorns, bay leaves, cloves, and enough water to cover in a large pot. Bring to a boil, then reduce to a simmer. Cook for 2-3 hours until the meat is tender.
  2. While the meat is cooking, peel and cut the potatoes, turnips, carrots, and rutabaga into chunks.
  3. Once the meat is almost tender, add the root vegetables to the pot. Salt to taste and cook until the vegetables are soft, about 30 minutes.
  4. Remove the pork knuckle and set aside. Strain the vegetables, reserving the cooking liquid.
  5. Mash the vegetables with a little of the reserved liquid until smooth, adjusting seasoning as needed.
  6. Slice the pork knuckle and serve with mashed root vegetables and a dollop of mustard on the side.
