Näkkileipä, a traditional Finnish crispbread, is a staple in Nordic cuisine. Originating from the necessity to create bread with a long shelf life, näkkileipä has been baked in homes throughout Finland for centuries. This crispy bread, typically made from rye flour, is celebrated for its nutty flavor and hard texture, which pairs perfectly with a variety of toppings ranging from butter and cheese to fish roe. It is often served as an accompaniment to meals or enjoyed as a quick snack.

Ingredients

  • rye flour – 2 cups / 240 g
  • all-purpose flour – 1 cup / 120 g
  • salt – 1 teaspoon
  • warm water – 1 cup / 240 ml
  • dry yeast – 1 teaspoon
  • honey – 1 tablespoon / 15 ml
  • sesame seeds – 2 tablespoons / 16 g

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, dissolve the yeast in warm water and add the honey. Leave it to bloom for about 5 minutes until frothy.
  3. Mix in the rye and all-purpose flours along with salt into the yeast mixture.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth.
  5. Roll out the dough thinly, about 1/8 inch (3 mm) thick. Cut into rounds or the desired shape.
  6. Place the shaped dough onto baking sheets lined with parchment paper.
  7. Sprinkle sesame seeds over the top of each piece.
  8. Bake for 15 minutes until crisp and lightly browned.
  9. Cool on a wire rack before serving.
