Ingredients

  • salmon fillet – 1 kg / 2.2 lbs

  • granulated sugar – 100 g / 1/2 cup
  • dill – 1 bunch / 30 g
  • lemon zest – 1 lemon
  • black peppercorns – 1 tbsp / 15 g

Instructions

  2. Place the salmon fillet in a shallow dish and cover it entirely with the beetroot mixture. Ensure it’s well packed.
  3. Wrap tightly with plastic wrap and place a weight on top to help the curing process. Refrigerate for 48 hours.
  4. Remove the salmon from the beetroot curing mix and rinse under cold water. Pat dry with paper towels.
