Qottab is a delightful Iranian pastry that embodies the rich culinary traditions of the region. These crescent-shaped pastries are a revered treat, typically enjoyed during festive occasions. Ingredients

  • all-purpose flour – 2 cups / 240 g
  • unsalted butter – 1/2 cup / 115 g
  • yogurt – 1/2 cup / 120 ml
  • egg yolks – 2
  • baking powder – 1 tsp / 4 g
  • sugar – 1/4 cup / 50 g
  • cardamom powder – 1 tsp / 2 g
  • crushed almonds – 1 cup / 150 g
  • powdered sugar – As needed for dusting
  • rosewater – 2 tbsp / 30 ml
  • vegetable oil – For deep frying

Instructions

  1. In a large mixing bowl, combine all-purpose flour and baking powder.
  2. Melt the unsalted butter and allow it to cool slightly. Add it to the flour mixture along with yogurt, egg yolks, and sugar. Mix until a soft dough forms.
  3. Wrap the dough in plastic wrap and let it rest for 1 hour.
  4. For the filling, mix crushed almonds with cardamom powder, rosewater, and additional sugar.
  5. Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a round cutter.
  6. Place a small spoonful of almond filling on each circle. Fold over to form a crescent shape and press the edges to seal.
  7. Heat vegetable oil in a deep fryer or large saucepan to 350°F (175°C). Fry the pastries in batches until golden brown, about 3-4 minutes.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Once cool, dust generously with powdered sugar.
