Dilber Dudağı, which translates to ‘Lady’s Lips,’ is an exquisite and traditional Turkish pastry. Ingredients
- all-purpose flour – 2.5 cups / 300 g
- unsalted butter – 1 cup / 225 g
- yogurt – 0.5 cup / 120 g
- baking powder – 1 tsp / 5 g
- granulated sugar – 2 cups / 400 g
- water – 2 cups / 480 ml
- lemon juice – 1 tbsp / 15 ml
- ground walnuts – 1 cup / 100 g
- egg yolk – 1 large
- salt – pinch
Instructions
- Prepare the syrup by combining 2 cups of sugar and 2 cups of water in a saucepan. Bring to a boil, add 1 tbsp of lemon juice, and simmer for 10 minutes. Let it cool completely.
- In a large bowl, mix the flour, baking powder, and a pinch of salt. Add 0.5 cup of yogurt and mix until a dough forms.
- Divide the dough into small portions and roll each into thin circles using a rolling pin.
- Place a small spoonful of ground walnuts at the center of each dough circle. Fold the dough over the filling, forming a lip-shaped pastry.
- Brush the top of each pastry with egg yolk and place them on a greased baking sheet.
- Bake in a preheated oven at 350°F (175°C) for about 25 minutes or until golden brown.
- Once baked, immediately pour the cooled syrup over the hot pastries. Let them absorb the syrup as they cool.
