Tamees, also known as Ta’amiyah, is a traditional bread widely enjoyed in Saudi Arabia. It boasts a rich history rooted in Middle Eastern cuisine, with influences that date back to ancient bread-making traditions in the region. Known for its light and fluffy texture, Tamees is typically made using a blend of wheat and is often enjoyed fresh out of the oven, pairing well with a variety of dips and dishes, such as hummus or grilled meats. With its aromatic infusion of sesame seeds, this bread offers a delightful combination of softness, flavor, and a hint of nutty undertone.
Ingredients
- all-purpose flour – 3 cups / 360 g
- water – 1 cup / 240 ml
- active dry yeast – 1 package / 7 g
- sugar – 1 tablespoon / 15 g
- olive oil – 2 tablespoons / 30 ml
- salt – 1 teaspoon / 5 g
- sesame seeds – 2 tablespoons / 18 g
Instructions
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until it becomes frothy.

- Mix the ingredients until a soft dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in an oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
- Preheat the oven to 475°F (245°C).
- Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a ball and flatten slightly.

- Serve warm with your favorite dip or accompaniment.
