Bolani is a traditional Afghan bread that hails from the diverse culinary tapestry of Afghanistan. Known for its delicate balance of flavors and textures, Bolani is a stuffed flatbread typically filled with ingredients like potatoes, leeks, or squash. Its crispy outer shell gives way to a soft, spiced interior, making it a beloved dish enjoyed as a snack, side, or main course. Its origins are deeply rooted in Afghan culture, where it is often prepared during special occasions and gatherings.

Ingredients

  • All-purpose flour – 2 cups / 240 g
  • Warm water – 3/4 cup / 180 ml
  • Salt – 1 tsp / 5 g
  • Potatoes – 2 large / about 400 g, boiled and mashed
  • Green onions – 1 bunch / about 100 g, finely chopped
  • Cilantro – 1/2 cup / 30 g, chopped
  • Ground cumin – 1 tsp / 2 g
  • Ground black pepper – 1/2 tsp / 1 g
  • Olive oil – 1/4 cup / 60 ml for frying

Instructions

  1. In a large bowl, combine flour and salt. Gradually add warm water, mixing until a dough forms. Knead the dough for about 10 minutes until smooth. Cover and let it rest for 30 minutes.
  2. In another bowl, mix boiled and mashed potatoes with green onions, cilantro, cumin, and pepper until well blended.
  3. Divide the dough into 8 equal parts. Roll each piece into a circle about 8 inches in diameter.
  4. Place a few tablespoons of the potato mixture on one half of each dough circle, spreading evenly but leaving edges clear.
  5. Fold the dough over the filling to form a half-moon shape. Press the edges firmly to seal.
  6. Heat olive oil in a skillet over medium heat. Fry each Bolani until golden and crispy, about 3 minutes per side.
  7. Drain on paper towels and serve warm.
