Ingredients

  • tomatoes – 4 medium / 600 g
  • cucumbers – 2 medium / 300 g
  • green bell pepper – 1 large / 150 g
  • red onion – 1 small / 100 g
  • fresh parsley – 1 bunch / 30 g
  • extra-virgin olive oil – 1/4 cup / 60 ml
  • lemon juice – 3 tbsp / 45 ml
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Wash all vegetables thoroughly.
  2. Dice the tomatoes and cucumbers into small, even pieces.
  3. Remove the seeds from the bell pepper and chop finely.
  4. Thinly slice the red onion.
  5. Chop the parsley roughly.
  6. In a large bowl, combine all the chopped vegetables and parsley.
  7. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  8. Pour the dressing over the salad and toss gently to combine.
  9. Taste and adjust seasoning if necessary.
