Ingredients
- zucchini – 2 medium / 400 g
- eggs – 2
- all-purpose flour – 1/2 cup / 60 g
- feta cheese – 100 g, crumbled
- dill – 2 tablespoons, chopped
- parsley – 2 tablespoons, chopped
- green onions – 2, finely chopped
- salt – 1 teaspoon
- black pepper – 1/2 teaspoon
- olive oil – for frying
Instructions
- Grate the zucchini and squeeze out excess moisture using a cheesecloth or clean kitchen towel.
- In a large bowl, beat the eggs and then add the flour, mixing until smooth.
- Fold in the grated zucchini, feta cheese, dill, parsley, and green onions. Season with salt and black pepper.
- In a large skillet, heat olive oil over medium heat. Drop heaping tablespoons of the batter into the skillet, flattening slightly.
- Cook for 3-4 minutes on each side or until golden brown and cooked through.
- Serve hot with a side of yogurt or as part of a mezze platter.
