Ingredients
- ground beef or lamb – 500 g / 1.1 lbs
- rice – 100 g / 0.5 cup
- onion – 1 medium, finely chopped
- garlic – 2 cloves, minced
- egg – 1 large
- parsley – 2 tbsp, finely chopped
- salt – 1 tsp
- black pepper – 1/2 tsp
- olive oil – 2 tbsp
- water or beef broth – 1.5 liters / 6 cups
- tomato paste – 2 tbsp
- carrot – 1 large, diced
- potato – 1 large, diced
Instructions
- In a bowl, combine ground meat, rice, onion, garlic, egg, parsley, salt, and black pepper. Mix well to combine.
- Form mixture into small meatballs about the size of a walnut.
- Heat olive oil in a large pot over medium heat. Add the meatballs and brown on all sides for about 5 minutes.
- Add water or beef broth, tomato paste, carrot, and potato to the pot. Stir gently to combine.
- Bring stew to a boil, then reduce heat to low and cover. Simmer for 30 minutes or until vegetables are tender.
- Adjust seasoning if necessary and serve hot.
