Mıcırık Aşı is a traditional Turkish stew that hails from the heartland of Anatolia. Ingredients
- Lamb shoulder – 500 g / 1 lb, cubed
- Chickpeas – 200 g / 1 cup, soaked overnight
- Bulgar wheat – 150 g / 3/4 cup
- Onions – 200 g / 2 medium, finely chopped
- Tomato paste – 2 tbsp
- Garlic – 3 cloves, minced
- Olive oil – 2 tbsp
- Turkish red pepper flakes – 1 tsp
- Cumin powder – 1 tsp
- Paprika – 1 tsp
- Salt – to taste
- Black pepper – to taste
- Water – 1 litre / 4 cups
- Fresh parsley – for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onions and cook until translucent, about 5 minutes.
- Add the lamb cubes to the pot and sear on all sides until browned.
- Stir in the minced garlic and tomato paste. Cook for another 2 minutes until the tomato paste is well incorporated.
- Add the soaked chickpeas, Turkish red pepper flakes, cumin, paprika, salt, and black pepper. Stir well to combine.
- Pour in the water, bring the mixture to a boil, then reduce the heat to low and let it simmer for 45 minutes.
- After 45 minutes, add the bulgur wheat to the pot, stir to combine, and let it continue to simmer for another 15 minutes or until the bulgur is tender.
- Adjust seasoning as needed. Serve hot, garnished with fresh parsley.
