Ingredients
- lamb meat – 300 g / 10.5 oz, cut into cubes
- young garlic – 10 cloves, sliced
- green onions – 8 stalks, roughly chopped
- natural yogurt – 500 g / 2 cups
- water – 1 liter / 4 cups
- butter – 50 g / 3.5 tbsp
- mint – 2 tbsp, dried
- lemon juice – 2 tbsp
- egg – 1, beaten
- salt – to taste
- black pepper – to taste
Instructions
- In a large pot over medium heat, melt the butter and add lamb cubes, browning on all sides for about 5-7 minutes.
- Add the young garlic and green onions, sautéing for another 3-5 minutes until fragrant.
- Pour in the water and bring to a boil. Reduce heat and simmer gently for about 30 minutes until lamb is tender.
- In a separate bowl, mix yogurt with a beaten egg and lemon juice to avoid curdling.
- Slowly add a ladle of the hot soup into the yogurt mixture, stirring constantly.
- Gradually incorporate the yogurt mixture back into the pot, stirring continuously.
- Simmer gently without boiling for another 10 minutes until the soup thickens slightly.
- Season with salt, pepper, and dried mint. Serve hot.
