Beyti kebab – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Beyti Kebab is a succulent Turkish meat dish known for its flavorful ground meat, typically lamb or beef, wrapped in a delicate layer of yufka (thin dough) and roasted to perfection. Originating from the diverse culinary landscape of Turkey, Beyti Kebab is inspired by the traditional kebabs of the Ottoman era, named after Beyti Güler, a renowned Istanbul chef who popularized this variation in the mid-20th century. The dish is celebrated for its tender, juicy interior and the crispy, golden-brown exterior, often served with yogurt and a spicy tomato sauce to enhance its rich flavors.

Ingredients

  • ground lamb or beef – 500 g / 1.1 lbs
  • yufka dough or phyllo dough – 3 sheets
  • onion, finely chopped – 1 medium / 150 g
  • garlic cloves, minced – 2 cloves
  • red bell pepper, finely diced – 1 small / 120 g
  • fresh parsley, chopped – 1/4 cup / 15 g
  • cumin – 1 tsp / 2 g
  • paprika – 1 tsp / 2 g
  • olive oil – 2 tbsp / 30 ml
  • tomato paste – 2 tbsp / 30 g
  • plain yogurt – 1 cup / 240 g
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 1 g

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. In a large bowl, combine ground lamb or beef, onion, garlic, red bell pepper, parsley, cumin, paprika, salt, and black pepper. Mix until everything is well incorporated.
  3. Lay out one sheet of yufka dough and brush it lightly with olive oil. Place a portion of the meat mixture along one edge and roll tightly into a log. Repeat with remaining dough and meat.
  4. Cut each log into segments approximately 6 cm (2.5 inches) long and place them on a baking tray lined with parchment paper.
  5. Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through and the dough is golden brown.
  6. While kebabs are baking, whisk together tomato paste with a small amount of hot water to form a sauce. Warm it gently on the stove.
  7. Serve the Beyti kebabs hot, drizzled with the tomato sauce and a side of plain yogurt.
