Mahmoos al-samak is a traditional Saudi Arabian seafood dish renowned for its aromatic spices and the freshness of its seafood. Ingredients

  • Fish fillets (such as haddock or cod) – 500 g / 1.1 lb
  • Onion, finely chopped – 1 large / 150 g
  • Tomatoes, diced – 2 medium / 350 g
  • Garlic cloves, minced – 3 cloves
  • Ground cumin – 1 tsp / 2 g
  • Ground coriander – 1 tsp / 2 g
  • Turmeric powder – 1/2 tsp / 1 g
  • Chili powder – 1/2 tsp / 1 g
  • Salt – 1 tsp / 5 g
  • Lemon juice – 2 tbsp / 30 ml
  • Olive oil – 3 tbsp / 45 ml
  • Chicken stock – 2 cups / 480 ml
  • Fresh cilantro, chopped – 1/4 cup / 15 g

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add the chopped onions and sauté until they become translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the tomatoes and cook until they start to break down, about 5 minutes.
  5. Add cumin, coriander, turmeric, chili powder, and salt. Mix well to combine.
  6. Lay the fish fillets over the sauce and gently coat them with the spice mixture.
  7. Pour in the chicken stock, covering the fish, and bring to a gentle simmer.
  8. Cover the pan and cook for 15-20 minutes until the fish is cooked through.
  9. Squeeze lemon juice over the fish before serving and garnish with fresh cilantro.
