Mahshi Lift is a traditional Palestinian dish that embodies the heart and soul of Middle Eastern cuisine. The name ‘mahshi’ translates to ‘stuffed,’ and ‘lift’ refers to the turnips central to this recipe. Originating from the rich culinary history of Palestine, Mahshi Lift brings together tender turnips stuffed with a spiced rice and meat mixture. The dish is slow-cooked to perfection, allowing all the flavors to meld and the turnips to absorb the aromatic spices, creating a comfort meal that hails from the age-old traditions of the Levant region.
Ingredients
- Turnips – 12 small
- Ground beef or lamb – 300 g / 10.5 oz
- Short grain rice – 200 g / 1 cup
- Onion, finely chopped – 1 large
- Tomato paste – 60 g / 4 tbsp
- Olive oil – 45 ml / 3 tbsp
- Hot water – 480 ml / 2 cups
- Salt – 2 tsp
- Black pepper – 1 tsp
- Allspice – 1 tsp
- Cinnamon – 0.5 tsp
- Pine nuts – 50 g / 1⁄4 cup, toasted
- Garlic cloves, minced – 3
Instructions
- Peel the turnips and hollow out the centers to create space for the stuffing.
- Rinse rice under cold water until the water runs clear, then drain completely.
- In a large bowl, combine the ground meat, rice, finely chopped onion, a tablespoon of olive oil, salt, black pepper, allspice, and cinnamon.
- Stuff the hollowed turnips with the prepared meat and rice mixture, pressing gently to compact the filling.
- Place the stuffed turnips, open-side up, in a deep pot. Mix the tomato paste, remaining olive oil, minced garlic, and hot water together, then pour over the turnips to cover them halfway.
- Cover the pot and simmer on low heat for about 1.5 to 2 hours, or until the turnips are tender and the rice is fully cooked.
- Serve warm, garnished with toasted pine nuts.
