Ingredients

- Olive oil – 1/4 cup / 60 ml

- Garlic cloves – 4, minced
- Ground cumin – 2 tsp / 5 g
- Ground coriander – 2 tsp / 5 g
- Paprika – 1 tsp / 2 g
- Salt – 1 tsp / 6 g
- Black pepper – 1/2 tsp / 2 g
- Yogurt – 1/2 cup / 120 g
- Fresh cilantro – 1/4 cup / 15 g, chopped
Instructions
- In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, coriander, paprika, salt, and pepper.
- Stir in yogurt and chopped cilantro to create a marinade.
- Coat the chicken quarters in the marinade, ensuring each piece is well covered.
- Marinate the chicken in the refrigerator for at least 2 hours, preferably overnight for more intense flavor.
- Preheat your grill to medium heat.
- Grill the chicken for 30-35 minutes, turning occasionally until the chicken is fully cooked and has a nice char.
- Rest the chicken for 5 minutes before serving.
