Ingredients

  • Potatoes – 4 large / 1.5 kg
  • Olive oil – 1/4 cup / 60 mL
  • Garlic cloves – 4 cloves, minced
  • Fresh coriander – 1 bunch, chopped
  • Red chili peppers – 2, finely chopped
  • Lemon juice – 2 tbsp / 30 mL
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp

Instructions

  1. Peel and dice the potatoes into small cubes.
  2. Heat olive oil in a large frying pan over medium heat.
  3. Add the potatoes and fry until golden and crispy, about 15-20 minutes.
  4. Add minced garlic and chopped chili, sauté for another 2 minutes.
  5. Stir in the chopped coriander, lemon juice, salt, and pepper.
  6. Cook for another minute, then remove from heat.
  7. Serve hot as a starter or side dish.
