Serdakh is an exquisite vegetarian dish hailing from the culinary heritage of Azerbaijan. Ingredients
- Eggplants – 2 medium / 500 g
- Tomatoes – 4 medium / 600 g
- Bell peppers – 2 large / 250 g
- Onions – 2 large / 300 g
- Garlic – 4 cloves / 20 g
- Olive oil – 4 tbsp / 60 ml
- Paprika – 1 tsp / 5 g
- Cumin – 1 tsp / 5 g
- Salt – to taste
- Black pepper – to taste
- Fresh parsley – 1/2 cup / 30 g, chopped
- Lemon juice – 2 tbsp / 30 ml
Instructions
- Preheat your oven to 200°C (400°F).
- Slice the eggplants into round discs, sprinkle with salt, and let them sit for 15 minutes to remove bitterness. Rinse and pat dry.
- Dice the tomatoes and bell peppers. Thinly slice the onions and mince the garlic.
- Heat olive oil in a large pan over medium heat. Sauté onions until translucent, about 5 minutes.
- Add garlic, paprika, and cumin to the pan. Stir for an additional minute until aromatic.
- Incorporate tomatoes and bell peppers, cooking for 8-10 minutes until softened.
- Layer eggplant slices on a baking dish, pour the vegetable mixture over the top, and season with salt and pepper.
- Cover the dish with foil and bake in the preheated oven for 30-35 minutes until the eggplant is tender.
- Garnish with fresh parsley and drizzle with lemon juice before serving.
