Ingredients

  • potatoes – 4 medium / 600 g
  • eggs – 6 large
  • fresh parsley – 1/2 cup / 30 g, chopped
  • fresh cilantro – 1/2 cup / 30 g, chopped
  • green onions – 1/4 cup / 25 g, chopped
  • turmeric powder – 1 tsp / 5 g
  • salt – 1 tsp / 6 g
  • black pepper – 1/2 tsp / 3 g
  • olive oil – 2 tbsp / 30 ml

Instructions

  1. Peel and grate the potatoes. Squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, beat the eggs until fully combined. Add the grated potatoes, chopped parsley, cilantro, and green onions.
  3. Mix in turmeric, salt, and pepper until thoroughly combined.
  4. Heat the olive oil in a non-stick skillet over medium heat. Pour the mixture into the skillet, spreading it evenly.
  5. Cook on medium-low heat for about 15-20 minutes until the bottom is golden brown and the kuku is set.
  6. Flip the kuku using a large plate and cook the other side for an additional 10 minutes.
  7. Let it cool slightly before slicing and serving.
