Originating from the rich culinary traditions of Iran, this stew features zucchini (kadu) as its central ingredient, blending harmoniously with a tomato and saffron-infused sauce. Ingredients
- olive oil – 2 tbsp
- onion – 1 large, finely chopped
- garlic – 3 cloves, minced
- zucchini – 2 medium, sliced
- tomatoes – 4 medium, chopped
- tomato paste – 2 tbsp
- ground turmeric – 1 tsp
- ground cumin – 1/2 tsp
- dried lime (limoo amani) – 2 whole
- saffron threads – a pinch, soaked in 2 tbsp hot water
- salt – to taste
- black pepper – to taste
- water – 2 cups / 480 ml
- fresh cilantro – a handful, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent.
- Add garlic and sauté for another minute.
- Stir in turmeric and cumin, followed by sliced zucchini. Cook until zucchini is lightly browned.
- Add chopped tomatoes and tomato paste. Stir well to combine.
- Pierce dried limes with a fork and add to the pot along with 2 cups of water.
- Bring to a boil, then reduce to simmer. Cover and cook for about 30 minutes.
- Stir in saffron water, salt, and pepper. Simmer for an additional 10 minutes.
- Serve hot, garnished with fresh cilantro.
Substitutions
