Khoresh Gheimeh is a rich and aromatic Persian stew that embodies the exquisite culinary traditions of Iran. This dish is a staple in Iranian households, known for its tangy and savory flavors brought together in a comforting, hearty meal. The stew traditionally combines tender chunks of lamb or beef with split peas, dried lime, and a blend of spices that includes turmeric and cinnamon, offering a savory taste with a fragrant twist. Ingredients

  • lamb (cubed) – 1 lb / 450 g
  • yellow split peas – 1 cup / 190 g
  • onion (chopped) – 1 large / 200 g
  • tomato paste – 2 tbsp / 30 g
  • dried lime – 3 pieces
  • vegetable oil – 4 tbsp / 60 mL
  • turmeric – 1 tsp / 2 g
  • ground cinnamon – 1/2 tsp / 1 g
  • salt – to taste
  • black pepper – 1/2 tsp / 1 g
  • water – 5 cups / 1.2 L
  • potatoes (thinly sliced for fries) – 2 medium / 300 g
  • saffron (optional) – a pinch

Instructions

  1. In a large pot, heat 2 tbsp of vegetable oil over medium heat. Add chopped onions and sauté until golden.
  2. Add turmeric and cubed lamb, searing the meat until browned on all sides.
  3. Stir in tomato paste, cooking for an additional 2 minutes.
  4. Add split peas, dried limes, cinnamon, salt, and black pepper. Pour in water and bring to a boil.
  5. Lower the heat, cover, and let simmer for approximately 1.5 hours, or until meat and split peas are tender.
  6. Meanwhile, in another pan, heat 2 tbsp of oil and fry sliced potatoes until crispy. Drain on paper towels.
  7. Before serving, adjust the seasoning and gently crush the dried limes for extra flavor.
  8. Serve the khoresh hot, topped with fries, alongside steamed basmati rice, optionally infused with saffron.
