Ingredients
- chicken thighs – 4, bone-in / 600 g
- onion – 1 large, finely chopped
- walnuts – 2 cups / 200 g, finely ground
- pomegranate molasses – 1 cup / 240 ml
- ground cinnamon – 1 tsp / 2 g
- turmeric powder – 1/2 tsp / 1 g
- sugar – 2 tbsp / 25 g
- salt – 1 tsp / 5 g
- black pepper – 1/2 tsp / 2 g
- water – 2 cups / 480 ml
- olive oil – 2 tbsp / 30 ml
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until golden and translucent.
- Add chicken thighs to the pot, browning on both sides. Remove and set aside.
- In the same pot, add walnuts and roast for a few minutes until aromatic.
- Stir in pomegranate molasses, ground cinnamon, turmeric, sugar, salt, and black pepper.
- Pour in water, return chicken to the pot, and bring to a boil.
- Reduce heat to low, cover and simmer for 1.5 to 2 hours or until chicken is tender and sauce thickened.
- Adjust seasoning to taste before serving.

- pomegranate molasses -> cranberry juice concentrate
- walnuts -> almonds or pecans
