Buglama is a traditional Azerbaijani stew known for its lush, hearty flavors and tender, slow-cooked meat. Originating from the vibrant cultures of Azerbaijan, this dish showcases the country’s rich culinary heritage, blending a variety of vegetables and spices to create a comforting and satisfying stew. The word ‘Buglama’ itself means ‘to steam’ in Azerbaijani, highlighting the traditional cooking method that locks in flavor and moisture, resulting in succulent, flavorful meat embedded in a medley of fresh, colorful vegetables.

Ingredients

  • Lamb shoulder – 2 lbs / 900 g
  • Onion – 2 large, sliced
  • Tomatoes – 3, chopped
  • Bell peppers – 2, any color, sliced
  • Baby potatoes – 10-12 small, halved
  • Garlic – 4 cloves, minced
  • Salt – 2 tsp
  • Black pepper – 1 tsp
  • Paprika – 1 tsp
  • Bay leaves – 2
  • Fresh cilantro – 1 bunch, chopped
  • Water – 2 cups / 480 ml

Instructions

  1. Season the lamb shoulder pieces with salt, black pepper, and paprika.
  2. In a large pot, layer half of the sliced onions, tomatoes, and bell peppers.
  3. Add the seasoned lamb pieces on top of the layered vegetables.
  4. Layer the rest of the onions, tomatoes, and bell peppers over the meat.
  5. Add the halved potatoes on top, followed by minced garlic and bay leaves.
  6. Pour water over the mixture and bring to a boil.
  7. Reduce the heat to low, cover the pot, and let it simmer for about 2 hours, or until the meat is tender.
  8. Stir occasionally to ensure the ingredients do not stick to the bottom.
  9. Before serving, stir in fresh cilantro.

  • Baby potatoes -> Regular potatoes, diced
