Ingredients

  • onions – 4 large / 800 g
  • water – 6 cups / 1.4 liters
  • dried fenugreek leaves – 2 tablespoons / 10 g
  • flour – 2 tablespoons / 16 g
  • cooking oil – 3 tablespoons / 45 ml
  • eggs – 4 large
  • salt – to taste
  • black pepper – 1 teaspoon / 5 g
  • turmeric – 1 teaspoon / 5 g

Instructions

  1. Peel and thinly slice the onions.
  2. In a large pot, heat the cooking oil over medium heat. Add the onions and sauté until they become golden and translucent.
  3. Sprinkle the flour over the onions, stirring continuously to ensure even coating.
  4. Add the turmeric and continue to cook for another minute to toast the spice.
  5. Pour in the water and bring to a boil, then reduce the heat and let it simmer for about 20 minutes.
  6. Stir in the dried fenugreek leaves, salt, and black pepper.
  7. Crack the eggs directly into the simmering soup, stirring gently to distribute them without breaking them up entirely. Cook for another 5 minutes until the eggs are set.
  8. Serve hot, adjusting seasoning if necessary.
