Shirin Plov, a festive and delectably sweet rice dish hails from the rich culinary traditions of Azerbaijan. A centerpiece in Azerbaijani festivities, Shirin Plov is an embodiment of Middle Eastern influences married with local ingredients. It symbolizes hospitality and is often served during special occasions and family gatherings. This dish is known for its fragrant steamed rice interlaced with the sweetness of dried fruits like apricots and raisins, and subtle notes from saffron — creating a balance that is truly a feast for the senses.

Ingredients

  • basmati rice – 2 cups / 400 g
  • water – 4 cups / 960 ml
  • butter – 100 g / 7 tablespoons
  • saffron threads – a pinch (about 1/4 teaspoon)
  • hot water – 1/4 cup / 60 ml
  • dried apricots, chopped – 1 cup / 150 g
  • raisins – 1 cup / 150 g
  • slivered almonds – 1/2 cup / 50 g
  • sugar – 1/4 cup / 50 g
  • salt – 1 teaspoon

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in fresh water for 30 minutes, then drain.
  2. In a large pot, bring the 4 cups of water to a boil. Add the soaked and drained rice with 1 teaspoon of salt. Cook uncovered at medium-high until rice is al dente — about 7 minutes. Drain and set aside.
  3. Dissolve saffron threads in 1/4 cup of hot water and set aside to steep.
  4. In a heavy-bottomed saucepan, melt about half of the butter and add the rice. Gently fluff the rice with a fork to coat it with butter.
  5. Add the saffron water, dried apricots, raisins, and sugar into the rice. Carefully mix until well combined.
  6. In a small pan, melt the remaining butter, toss in the slivered almonds, and let them toast gently for a few minutes.
  7. Transfer the rice mixture into a serving dish, sprinkle the toasted almonds on top, and serve warm.

  • slivered almonds -> chopped pistachios
