Ingredients

  • Grape leaves – 20 large, preserved or fresh
  • Ground beef or lamb – 500 g / 1 lb
  • Rice – 100 g / 1/2 cup
  • Onion – 1 large, finely chopped
  • Dill – 1/4 cup / 10 g, finely chopped
  • Mint – 2 tbsp / 5 g, finely chopped
  • Cilantro – 1/4 cup / 10 g, finely chopped
  • Butter – 50 g / 3.5 tbsp
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Water or broth – 1 cup / 240 ml
  • Lemon – 1, juiced

Instructions

  1. Rinse the grape leaves if using preserved ones to remove excess salt.
  2. In a bowl, combine ground meat, rice, onion, dill, mint, cilantro, salt, and pepper.
  3. Blanch fresh grape leaves in boiling water for 2 minutes.
  4. Lay each leaf flat, shiny side down. Place a tablespoon of filling near the stem end, fold the sides over the filling, and roll up tightly.
  5. Place dolmas in a large pot, seam side down. Add butter in small pats over them.
  6. Pour water or broth and lemon juice over the dolmas. Place a plate on top to weigh them down.
  7. Cover and simmer on low heat for 1 hour, until the rice and meat are cooked through.
