Ingredients

  • bulgur wheat – 1/2 cup / 90 g
  • hot water – 1 cup / 240 ml
  • fresh parsley – 2 cups / 100 g, finely chopped
  • fresh mint leaves – 1/2 cup / 25 g, finely chopped
  • ripe tomatoes – 2 medium / 200 g, diced
  • cucumber – 1 medium / 150 g, diced
  • green onions – 3, finely sliced
  • lemon juice – 1/4 cup / 60 ml
  • extra virgin olive oil – 1/4 cup / 60 ml
  • salt – 1/2 tsp
  • black pepper – 1/4 tsp

Instructions

  1. Rinse the bulgur wheat under cold water and then soak it in hot water for 15 minutes until soft. Drain any excess water.
  2. In a large bowl, combine the chopped parsley, mint, tomatoes, cucumber, and green onions.
  3. Add the soaked bulgur to the vegetable mixture.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and toss everything together until well combined.
  6. Let the tabouleh sit for at least 30 minutes before serving to allow the flavors to meld.
