Salenjaci – Classic

Salenjaci, a traditional Croatian pastry, hails from the rustic kitchens of Croatia’s rural villages. This delightful treat is known for its flaky layers and rich flavor, brought together by the unique addition of pork lard (salo), which gives it its name and distinct texture. Often filled with homemade plum jam, these pastries are a staple during the winter months, especially around Christmas. Their origins trace back to a time when resourcefulness in using every part of the pig was essential, and the result is a pastry rich in cultural heritage and comforting taste.
Ingredients
- all-purpose flour – 4 cups / 500 g
- pork lard (salo) – 1 cup / 220 g
- milk – 1 cup / 240 ml
- egg – 1 large
- salt – 1 tsp / 5 g
- plum jam – 1 cup / 250 g
- sugar – 2 tbsp / 30 g
- active dry yeast – 1 tbsp / 9 g
Instructions
- In a small bowl, dissolve the yeast in warmed milk with a pinch of sugar. Allow it to sit for about 5-10 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour and salt. Add in the yeast mixture and the beaten egg.
- Knead the mixture into a soft dough. Cover it with a cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
- Once risen, roll out the dough on a floured surface into a rectangular shape.
- Spread half of the pork lard over two-thirds of the dough. Fold the dough into thirds like a business letter, bringing the empty third over the middle third and then folding the remaining third on top.
- Roll out the dough again and repeat the folding process with the remaining lard.
- Let the dough rest for another 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough and cut it into squares. Place a teaspoon of plum jam in the center of each square and fold over to create a triangle, sealing the edges firmly.
- Place the pastries on a baking sheet lined with parchment paper. Brush with beaten egg and sprinkle with sugar.
- Bake for 20-25 minutes until golden brown. Let cool on a wire rack before serving.
