Qagħqa tal-Appostli is a traditional Maltese bread ring known for its symbolic meaning and delightful taste. Rooted in religious customs, these bread rings were historically prepared for celebration on Apostles’ Feast days. Featuring a slightly sweet and aromatic profile, this bread is generously coated with sesame seeds, creating a glorious texture and enhanced flavor that’s cherished across generations in Malta.
Ingredients
- all-purpose flour – 4 cups / 500 g
- warm water – 1 1/4 cups / 300 ml
- active dry yeast – 2 1/4 tsp / 7 g
- sugar – 2 tbsp / 30 g
- salt – 1 tsp / 5 g
- olive oil – 3 tbsp / 45 ml
- sesame seeds – 1/2 cup / 70 g
Instructions
- In a small bowl, dissolve the yeast and sugar in warm water. Allow it to sit for about 5-10 minutes until frothy.
- In a large bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then turn onto a floured surface and knead for 10 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat the oven to 400°F (200°C).
- Punch down the dough and divide it into two portions. Shape each portion into a ring and place on a baking sheet.
- Brush with a little water and sprinkle generously with sesame seeds.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Allow to cool slightly on a wire rack before serving.
