Quarnita-bit-tewm, or octopus in garlic, is a beloved seafood dish hailing from the Mediterranean island nation of Malta. Ingredients
- Fresh octopus – 2 lbs / 900 g
- Olive oil – 1/4 cup / 60 ml
- Garlic cloves, minced – 6 large cloves
- Lemon, juiced – 1
- Fresh parsley, chopped – 1/4 cup / 15 g
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Water – 2 cups / 480 ml
Instructions
- Thoroughly rinse the octopus under cold water and place it in a large pot.
- Add 2 cups of water and bring to a boil. Reduce the heat to low, cover, and let it simmer for 45 minutes to 1 hour, or until the octopus is tender.
- Drain the octopus and let it cool slightly. Cut into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Introduce the octopus pieces into the skillet, season with salt and black pepper, and sauté for an additional 3-4 minutes.
- Stir in the lemon juice and chopped parsley, toss to coat evenly.
- Serve warm with crusty bread for dipping.
