Ingredients
- green beans – 1 lb / 450 g
- olive oil – 2 tablespoons
- breadcrumbs – 1/2 cup / 60 g
- garlic – 3 cloves, minced
- salt – to taste
- black pepper – to taste
- fresh parsley – 2 tablespoons, chopped
- lemon juice – 1 tablespoon
Instructions
- Trim the ends of the green beans and cut them into 2-inch pieces.
- Bring a large pot of salted water to a boil and blanch the beans for 3-4 minutes until tender-crisp.
- Immediately drain the beans and transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the breadcrumbs to the skillet, stirring continuously, and cook until they are golden brown and toasted.
- Add the drained green beans to the skillet, toss well to coat them in the breadcrumb mixture.
- Season with salt, black pepper, and lemon juice, then cook for another 2 minutes, ensuring the beans are heated through.
- Sprinkle with fresh parsley before serving.
