Ingredients
- dried chickpeas – 2 cups / 400 g
- olive oil – 1/4 cup / 60 ml
- onion, finely chopped – 1 large
- garlic cloves, minced – 3
- lemon juice – 1/4 cup / 60 ml
- fresh rosemary – 1 sprig
- bay leaf – 1
- salt – to taste
- black pepper – to taste
- water – 8 cups / 2 liters
Instructions
- Rinse the dried chickpeas and soak them in water overnight. Drain and rinse again before cooking.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Add the soaked chickpeas to the pot, followed by the water, and bring to a boil.
- Reduce the heat to a simmer, add the rosemary and bay leaf. Cover and cook for about 1.5 to 2 hours or until the chickpeas are tender.
- Once cooked, add lemon juice, salt, and black pepper to taste. Stir well and let simmer for an additional 10 minutes.
- Remove the rosemary and bay leaf before serving. Enjoy warm with crusty bread.

- dried chickpeas -> canned chickpeas, reduce cooking time by half
- fresh rosemary -> dried rosemary, using 1 teaspoon
- lemon juice -> lime juice
