Ingredients

  • Carp fillets – 1.5 kg / 3.3 lbs

  • Carrots, sliced – 2 large / 200 g
  • Garlic cloves, minced – 4 cloves
  • Bay leaves – 2 leaves
  • Thyme – 1 tsp / 5 g
  • Olive oil – 4 tbsp / 60 ml
  • Salt – to taste
  • Black pepper – to taste
  • Lemon slices – for garnish

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Season the carp fillets with salt and black pepper.
  3. In a large baking dish, layer the onions and carrots as a bed for the carp.
  4. Place the seasoned carp fillets on top of the vegetables.
  5. Pour the white wine over the fish, ensuring it is mostly submerged.
  6. Add the garlic, bay leaves, and thyme around the fish.
  7. Drizzle with olive oil.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour.
  9. Remove the foil and bake for an additional 15 minutes to allow the top to brown slightly.
  10. Garnish with lemon slices before serving.
