Ingredients

- potatoes – 2 large / 400 g
- onion – 1 medium / 150 g
- garlic – 2 cloves
- olive oil – 3 tablespoons / 45 ml
- lemon juice – 2 tablespoons / 30 ml
- salt – 1 teaspoon / 5 g
- black pepper – 1/2 teaspoon / 2 g
Instructions
- Wash the wild greens thoroughly and chop them coarsely.
- Peel and dice the potatoes into small, equal-sized pieces.
- Finely chop the onion and mince the garlic.
- In a large pot over medium heat, warm the olive oil.
- Add the onion and garlic, sauté until translucent and fragrant.
- Add the potatoes, stirring occasionally, until they begin to soften (about 7-10 minutes).
- Add the greens and continue to cook until wilted and tender.
- Season with lemon juice, salt, and pepper, adjusting to taste.
- Serve warm with a drizzle of extra virgin olive oil if desired.
