Ingredients

  • fresh eel, cleaned and cut into pieces – 1.5 pounds / 680 g
  • raštika (or kale), chopped – 1 pound / 450 g
  • olive oil – 4 tablespoons
  • garlic, minced – 4 cloves
  • onion, finely chopped – 1 large / 150 g
  • white wine – 1 cup / 240 ml
  • vegetable or fish broth – 2 cups / 480 ml
  • salt – to taste
  • pepper – to taste
  • bay leaves – 2

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Place eel pieces into the pan, cook until slightly browned on each side.
  4. Pour in the white wine and allow it to simmer until reduced by half.
  5. Add chopped raštika and stir to combine with the eel and onions.
  6. Pour in the broth and add bay leaves, bring to a gentle simmer.
  7. Season with salt and pepper, cover the pan, and cook for 25-30 minutes, or until eel is tender and raštika is cooked through.
  8. Remove bay leaves before serving.
