Ingredients

  • octopus – 2 pounds / 900 g
  • potatoes – 2 medium-sized, peeled and diced
  • red onion – 1 large, thinly sliced
  • fresh parsley – 1/4 cup / 15 g, chopped
  • olive oil – 1/4 cup / 60 ml
  • red wine vinegar – 2 tablespoons / 30 ml
  • garlic – 2 cloves, minced
  • sea salt – to taste
  • black pepper – to taste
  • lemon – 1, juiced

Instructions

  1. Clean the octopus thoroughly under cold running water.
  2. Place the octopus in a large pot with enough water to cover it, bring to a boil, then reduce the heat to a simmer. Cook for about 45 to 60 minutes until tender. Test with a fork for tenderness.
  3. Once the octopus is cooked, remove it from the water and allow it to cool. Cut into bite-sized pieces.
  4. Boil the diced potatoes in salted water until they are tender, about 10-15 minutes. Drain and let them cool.
  5. In a large bowl, combine the octopus, potatoes, red onion, and parsley.
  6. Prepare the dressing by whisking together olive oil, red wine vinegar, minced garlic, lemon juice, salt, and pepper. Adjust seasoning to taste.
  7. Pour the dressing over the octopus mixture and toss gently to combine.
  8. Let the salad marinate in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
