Ingredients
- fresh mussels – 2 pounds / 900 g
- canned chickpeas, drained – 1 can / 400 g
- olive oil – 3 tablespoons / 45 ml
- garlic cloves, minced – 4
- onion, finely chopped – 1 medium
- crushed tomatoes – 1 cup / 240 ml
- white wine – 1/2 cup / 120 ml
- fresh parsley, chopped – 1/4 cup / 15 g
- lemon juice – 2 tablespoons / 30 ml
- salt – to taste
- black pepper – to taste
Instructions
- Clean the mussels under cold water, discarding any that are open and do not close when tapped.
- In a large pot, heat olive oil over medium heat. Add minced garlic and chopped onion, sauté until translucent.
- Add crushed tomatoes and white wine, bring to a simmer and cook for 5 minutes.
- Stir in chickpeas and season with salt and pepper.
- Add mussels to the pot, cover, and cook for about 5-7 minutes, or until all mussels have opened.
- Stir in lemon juice and freshly chopped parsley.
- Serve hot with crusty bread on the side.
