Sofrito Sauce – Classic

Ingredients

  • olive oil – 1/4 cup / 60 ml
  • onion, finely chopped – 2 medium / 300 g
  • red bell pepper, finely chopped – 1 large / 150 g
  • green bell pepper, finely chopped – 1 large / 150 g
  • garlic cloves, minced – 6 cloves / 24 g
  • tomato, peeled and diced – 2 large / 400 g
  • salt – 1 tsp / 6 g
  • black pepper – 1/2 tsp / 1 g
  • paprika – 1 tsp / 2 g

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in the red and green bell peppers, cooking until softened, about 5 minutes.
  4. Add the minced garlic and cook for an additional minute, until fragrant.
  5. Mix in the diced tomatoes, salt, black pepper, and paprika.
  6. Simmer the mixture for 15-20 minutes, stirring occasionally, until it thickens and the flavors meld together.
  7. Taste and adjust seasoning if necessary.

  • tomato -> canned crushed tomatoes
