Ingredients
- Olive oil – 2 tbsp / 30 ml
- Onion, finely chopped – 1 medium / 150 g
- Garlic – 3 cloves, minced
- Cuttlefish, cleaned and cut into small pieces – 500 g / 1.1 lbs
- Arborio rice – 1.5 cups / 300 g
- White wine – 1/2 cup / 120 ml
- Fish stock, warm – 4 cups / 1 liter
- Cuttlefish ink – 2 tbsp / 30 ml
- Salt – to taste
- Black pepper – to taste
- Parsley, chopped – 2 tbsp / 30 g
- Lemon wedges – For serving
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for another 1 minute.
- Add the cuttlefish pieces and cook until they start turning opaque.
- Mix in the rice, stirring well until it is coated with the oil.
- Pour in the white wine, allowing it to simmer until it’s almost evaporated.
- Gradually add the warm fish stock, one ladle at a time, stirring continuously as the rice absorbs the stock.
- After about 20 minutes, or when rice is creamy yet al dente, stir in the cuttlefish ink.
- Season with salt and pepper to taste.
- Garnish with chopped parsley and serve with lemon wedges.
