Moussaka is a layered eggplant and meat dish, traditionally associated with Greece but also popular throughout the Balkans and the Middle East. This hearty, comforting dish blends earthy flavors with rich textures, embodying the essence of Mediterranean cuisine. The dish primarily consists of layers of eggplant, a well-spiced meat sauce, and a creamy béchamel topping, baked to golden perfection.
Ingredients
- Eggplants – 2 large / 1 kg
- Olive oil – 4 tbsp / 60 ml
- Onion – 1 large / 150 g
- Garlic – 3 cloves
- Ground lamb – 500 g / 1 lb
- Tomatoes – 2 medium / 240 g
- Tomato paste – 2 tbsp / 30 g
- Red wine – 1/2 cup / 120 ml
- Cinnamon stick – 1 piece
- Bay leaf – 1 leaf
- Salt – to taste
- Black pepper – to taste
- Béchamel sauce – 2 cups / 480 ml
- Grated Parmesan cheese – 1/2 cup / 50 g
Instructions
- Preheat oven to 180°C (350°F).
- Slice the eggplants into 1 cm thick rounds, sprinkle with salt, and let them sit for 30 minutes to draw out moisture. Rinse and pat dry.
- Heat 2 tablespoons of olive oil in a pan over medium heat, fry eggplant slices until golden on each side. Drain on paper towels.
- In the same pan, add remaining olive oil, sauté chopped onion and garlic until translucent.
- Add ground lamb, cook until browned. Stir in diced tomatoes, tomato paste, red wine, cinnamon stick, bay leaf, salt, and pepper. Simmer for 30 minutes until thick.
- Layer half the eggplant in a baking dish, spread meat sauce, and top with remaining eggplant.
- Pour béchamel sauce over the top, sprinkle with Parmesan cheese.
- Bake for 45 minutes, or until the top is golden brown.
