Picante de Pallares is a vibrant and flavorful Peruvian dish that transforms the humble butter bean, known as ‘pallares’, into a rich stew. This traditional dish from coastal regions of Peru is renowned for its creamy texture and a delightful combination of spice and zest. Typically served as a comforting family meal, it exemplifies the fusion of indigenous ingredients with Spanish culinary influence, characterized by a unique seasoning mix and textural complexity.
Ingredients
- dried butter beans (pallares) – 2 cups / 400 g
- olive oil – 2 tbsp / 30 ml
- onion, chopped – 1 large / 150 g
- garlic cloves, minced – 3 cloves / 15 g
- aji amarillo paste – 2 tbsp / 30 g
- tomato, chopped – 1 large / 200 g
- vegetable broth – 4 cups / 960 ml
- fresh cilantro, chopped – 1/4 cup / 15 g
- salt – to taste
- pepper – to taste
Instructions
- Soak the dried butter beans overnight in plenty of water. Drain and rinse before cooking.
- In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and aji amarillo paste, cooking for another 2 minutes until fragrant.
- Add the chopped tomato and cook until softened, approximately 5 minutes.
- Pour in the vegetable broth and add the drained butter beans. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, or until the beans are tender.
- Stir in the chopped cilantro and season with salt and pepper to taste. Serve hot.
