Ingredients
- catfish fillets – 500 g / 1.1 lbs
- water – 4 cups / 960 ml
- culantro leaves – 50 g / 1.75 oz
- yellow potatoes – 200 g / 7 oz
- onion – 1 medium, chopped
- garlic cloves – 3, minced
- aji amarillo paste – 2 tbsp
- vegetable oil – 2 tbsp
- salt – to taste
- black pepper – to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and aji amarillo paste, cooking until fragrant, about 2 minutes.
- Pour in the water and bring to a boil.
- Add the catfish fillets and cook for about 10 minutes.
- Add the potatoes and culantro leaves.
- Simmer until the potatoes are tender, about 20 minutes.
- Season with salt and black pepper to taste.
- Serve hot, ensuring each bowl gets a generous amount of fish, potatoes, and broth.
