Sopa Teóloga, also known as Theologian’s Soup, is a traditional Peruvian dish originating from the Andean region. This hearty soup reflects a rich cultural fusion, blending indigenous ingredients with Spanish culinary influences brought by missionaries. Typically served during festive gatherings, it’s a nourishing concoction centered around creamy chicken broth, thickened with bread, and enriched by an array of spices, making it a feast for both body and soul.
Ingredients
- chicken thighs – 1 kg / 2.2 lbs
- chicken stock – 1.5 liters / 6 cups
- stale bread – 200 g / 7 oz
- whole milk – 500 ml / 2 cups
- onion – 1 large, chopped
- garlic cloves – 3, minced
- olive oil – 2 tbsp
- ground cumin – 1 tsp
- ground coriander – 1 tsp
- bay leaf – 1
- fresh parsley – for garnish
- salt – to taste
- black pepper – to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add chopped onion and minced garlic, cooking until the onion turns translucent.
- Add chicken thighs and brown them on all sides. Pour in the chicken stock, add bay leaf, cumin, coriander, salt, and pepper. Bring to a boil, then simmer.
- Tear the stale bread into pieces and add to the broth. Stir in the milk and let simmer until the bread softens and thickens the soup.
- Once the chicken is cooked through, remove it, shred the meat, and return it to the pot.
- Simmer the soup until it reaches the desired consistency. Adjust seasoning if necessary.
- Garnish with fresh parsley before serving.
