Huallpa chupe – Classic

Huallpa Chupe is a traditional Peruvian chicken soup, deeply rooted in the culinary heritage of the Andean region. Known for its rich, creamy texture and aromatic flavors, Huallpa Chupe beautifully blends chicken broth, fresh corn, potatoes, and a medley of Andean herbs, offering a taste that is both nourishing and reminiscent of ancient Peruvian traditions.

Ingredients

  • chicken breasts – 2 units / 500 g
  • onion – 1 large / 150 g, chopped
  • garlic cloves – 3 units, minced
  • potatoes – 2 large / 400 g, peeled and diced
  • fresh corn – 2 units / 300 g, cut into pieces
  • peas – 1 cup / 150 g
  • carrots – 2 large / 200 g, sliced
  • ají amarillo paste – 2 tablespoons
  • evaporated milk – 1 cup / 240 ml
  • chicken broth – 4 cups / 1 liter
  • vegetable oil – 2 tablespoons
  • salt – to taste
  • black pepper – to taste
  • quecucho – 1 tablespoon

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic, sauté until the onion is translucent.
  3. Stir in the ají amarillo paste and cook for another 2 minutes.
  4. Add the chicken broth, potatoes, corn, peas, and carrots. Bring to a boil.
  5. Reduce the heat and add the chicken breasts, cover and let simmer for about 20 minutes.
  6. Remove the chicken breasts, shred them, and return the shredded chicken to the pot.
  7. Stir in the evaporated milk and quecucho, then cook for another 5 minutes.
  8. Season with salt and black pepper to taste before serving.

Substitutions

  • ají amarillo paste -> cayenne pepper or hot paprika
  • quecucho -> cilantro or parsley
