- Paprika – 1 tbsp / 8 g
- Oregano – 2 tsp / 2 g
- Salt – 2 tsp / 12 g
- Black pepper – 1 tsp / 5 g
- Olive oil – 2 tbsp / 30 ml
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix soy sauce, lime juice, minced garlic, cumin, paprika, oregano, salt, black pepper, and olive oil to form a marinade.
- Generously coat the chicken with the marinade, ensuring it covers all surfaces and inside the cavity.
- Place the chicken on a roasting rack set inside a roasting pan.
- Roast for 1.5 hours, basting occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 74°C at the thickest part).
- Let the chicken rest for 10 minutes before carving and serving.
