  • Soy sauce – 1/4 cup / 60 ml
  • Lime juice – 3 tbsp / 45 ml
  • Garlic cloves, minced – 4
  • Ground cumin – 1 tbsp / 8 g
  • Paprika – 1 tbsp / 8 g
  • Oregano – 2 tsp / 2 g
  • Salt – 2 tsp / 12 g
  • Black pepper – 1 tsp / 5 g
  • Olive oil – 2 tbsp / 30 ml

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix soy sauce, lime juice, minced garlic, cumin, paprika, oregano, salt, black pepper, and olive oil to form a marinade.
  3. Generously coat the chicken with the marinade, ensuring it covers all surfaces and inside the cavity.
  4. Place the chicken on a roasting rack set inside a roasting pan.
  5. Roast for 1.5 hours, basting occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 74°C at the thickest part).
  6. Let the chicken rest for 10 minutes before carving and serving.
