Ingredients

  • fresh oysters – 16, shucked
  • olive oil – 3 tablespoons / 45 ml
  • onion – 1 medium, finely chopped
  • garlic – 2 cloves, minced
  • ripe tomatoes – 4 medium, diced
  • green olives – 1/2 cup / 80 g, pitted and sliced
  • capers – 2 tablespoons / 30 g, drained
  • jalapeño pepper – 1, seeded and chopped
  • bay leaf – 1
  • fresh parsley – 2 tablespoons / 8 g, chopped
  • lime juice – 2 tablespoons / 30 ml
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in diced tomatoes, olives, capers, jalapeño, and bay leaf. Cook for 10-15 minutes until tomatoes break down.
  4. Season with salt and black pepper to taste. Remove bay leaf and stir in parsley.
  5. Place oysters on the half shell on a baking sheet.
  6. Spoon veracruzana sauce over each oyster.
  7. Broil the oysters in a preheated oven for about 5 minutes until the sauce is bubbling and the oysters are just cooked through.
  8. Drizzle lime juice over the oysters before serving.
