- green olives – 1/2 cup / 80 g, pitted and sliced
- capers – 2 tablespoons / 30 g, drained
- jalapeño pepper – 1, seeded and chopped
- bay leaf – 1
- fresh parsley – 2 tablespoons / 8 g, chopped
- lime juice – 2 tablespoons / 30 ml
- salt – to taste
- black pepper – to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until translucent.
- Stir in diced tomatoes, olives, capers, jalapeño, and bay leaf. Cook for 10-15 minutes until tomatoes break down.
- Season with salt and black pepper to taste. Remove bay leaf and stir in parsley.
- Place oysters on the half shell on a baking sheet.
- Spoon veracruzana sauce over each oyster.
- Broil the oysters in a preheated oven for about 5 minutes until the sauce is bubbling and the oysters are just cooked through.
