Ingredients
- octopus – 2 pounds / 900 g
- limes – 10 each for juicing

- rocoto pepper – 1, diced
- corn kernels – 1 cup / 150 g, cooked
- sweet potatoes – 2, boiled and sliced
- sea salt – to taste
- avocado – 1, sliced (optional)
Instructions
- Cook the octopus in a large pot of boiling water for 45-60 minutes until tender. Allow it to cool to room temperature.
- Chop the cooked octopus into bite-sized pieces and place in a large bowl.
- Squeeze the limes to get about 1 cup of juice, removing any seeds.
- Pour the lime juice over the octopus pieces, ensuring they are well covered. Allow this to marinate for at least 30 minutes in the refrigerator.
- Add the sliced red onion, chopped cilantro, diced rocoto pepper, and cooked corn kernels to the marinated octopus.
- Mix gently to combine and season with sea salt to taste.
- Serve chilled, accompanied by sliced boiled sweet potatoes and optional avocado slices.
