Ingredients

  • octopus tentacles – 2 lbs / 900 g
  • aji panca paste – 2 tbsp / 30 g
  • garlic cloves – 4, minced
  • red wine vinegar – 1/4 cup / 60 ml
  • vegetable oil – 1/4 cup / 60 ml
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 2.5 g
  • oregano – 1 tsp / 5 g
  • lime wedges – for serving
  • skewers – 8 bamboo or metal

Instructions

  1. Boil octopus in salted water for 45 minutes until tender. Allow to cool.
  2. Cut the octopus into 2-inch pieces.
  3. Mix aji panca paste, minced garlic, red wine vinegar, vegetable oil, salt, black pepper, and oregano in a bowl to create a marinade.
  4. Add octopus to the marinade, ensuring it’s well-coated. Marinate for at least 1 hour in the refrigerator.
  5. Preheat a grill to medium-high heat.
  6. Thread marinated octopus onto skewers.
  7. Grill skewers for about 4-5 minutes per side until charred and heated through.
  8. Serve hot with lime wedges on the side.
